History: The popularity of wheatgrass juice started in the 1930s with experiments by Charles F. Schnabel, an agricultural chemist. In experiments with various grasses, Schnabel discovered that freshly cut wheatgrass helped nurse dying hens back to health. Subsequent experiments showed that a diet supplemented with wheatgrass resulted in double the egg production.
Wheatgrass (the young grass of the common wheat plant) is usually consumed freshly juiced or in the form of dried powder. Wheatgrass contains chlorophyll, amino acids, minerals, vitamins, and enzymes.
Wheatgrass is among the most alkaline of all commonly available foods.

Beta carotene: 120 IU
Vitamin E: 880 mcg
Vitamin C: 1 mg
Vitamin B12: 0.30 mcg

Potassium: 42 mg
Wheatgrass is one of the few vegetables to have Vitamin B12.
