Infusion is one of the major ways to make herbal medicinal teas. Bring distilled water to a rolling boil, then pour the boiling water over the dried herbs. Putting the herbs in a tea ball can make the process easier. Let the herbs steep in the hot water in a tightly covered container, typically for twenty minutes. Typical proportions are one ounce (or 28 grams) of dried herbs to one pint of distilled boiling water. After steeping, strain the herbs out (this is why a tea ball is easier). Drink the resulting tea.
The purpose of infusion is to make use of the volatile oils in aherbs, especially the delicate plant parts such as flowers and soft leaves. Because the volatile oils will dissipate into the air if simply boiled, the heating process must be done in a tightly closed container.
Sun tea is also an infusion, done with the heat of the sun rather than by steeping in boiled water. Expose herbs and water in a tightly closed glass jar to the sun for several hours.
