Rosemary contains rosmarinic acid, C18H16O8, is a natural polyphenol antioxidant carboxylic acid (an ester of caffeic acid with 3,4-dihydroxyphenyl lactic acid), found in such herbs as lemon balm, rosemary, oregano, sage, thyme and peppermint. Rosmarinic acid is antiviral, antibacterial, antiinflammatory and antioxidant. Eating foods spiced with herbs containing rosmarinic acid provides the body with a natural sun screen that can help cut the risk of skin cancer and sunburn.
